250g Digestive / Tennis biscuits
100g Butter
1 vanilla Pod/ extra
600g Cream cheese
100g Icing sugar
2 84ml Whipping Cream
Strawberries/Mixed berry compote and icing sugar for toppings

Preparation
Put the biscuits in a plastic plastic bag and crush into crumbs.
Transfer into a bowl and pour the melted butter over.
Mix thoroughly until coated, pour them into a cake tin and press the mix into the base to create an even layer and chill in the fridge for 1 hour to set.
In a bowl add cream cheese, icing sugar and Vanilla, then beat with a whisk/electric mixer until smooth. Add the cream last and mix well into the mixture until combined.
Pour mixture onto the set base and make sure that their are no air bubbles.
Smooth it out and place back into the fridge until set, which can be overnight.
